Slow-roasted pecans coated in a crunchy cinnamon sugar shell. Addictively snackable and perfect for salad toppings, gift giving, or snacking.
Preheat oven to 250°F and line a rimmed baking sheet with parchment paper.
In a small bowl, stir together sugar, cinnamon, and salt. Set aside.
In a large mixing bowl, whisk egg white, water, and vanilla extract until frothy.
Add pecan halves to the egg white mixture and stir until evenly coated.
Sprinkle the cinnamon-sugar mixture over the coated pecans and toss until every pecan is well covered.
Spread the pecans in a single layer on the prepared baking sheet. Bake for 1 hour, stirring every 20 minutes to break up clumps.
Let cool completely on the baking sheet. The coating will crisp up as it cools. Store in an airtight container for up to 2 weeks.
