Thin, crispy, golden pecan brittle with a satisfying snap. A classic holiday candy that makes a wonderful gift.
Line a baking sheet with parchment paper and grease lightly.
Combine sugar, corn syrup, and water in a heavy saucepan. Cook over medium heat, stirring until sugar dissolves.
Add pecans and continue cooking without stirring until a candy thermometer reads 300°F (hard crack stage). The mixture should be golden amber.
Remove from heat and quickly stir in butter, vanilla, baking soda, and salt. The mixture will foam up.
Immediately pour onto the prepared baking sheet and spread thin with a greased spatula.
Let cool completely until hard, about 30 minutes. Break into irregular pieces.
