Crispy baked sweet potato fries coated in a crunchy pecan crust with a touch of cayenne heat. A healthier take on a classic side dish.
Preheat oven to 425°F. Line two large baking sheets with parchment paper and lightly grease with cooking spray.
Toss the sweet potato sticks with olive oil in a large bowl. In a shallow dish, combine the ground pecans, panko, garlic powder, smoked paprika, cayenne, and sea salt.
Working in batches, dip the sweet potato sticks into the egg whites, then roll in the pecan mixture, pressing gently to adhere.
Arrange the coated fries in a single layer on the prepared baking sheets, leaving space between each fry for even crisping.
Bake for 22 to 25 minutes, flipping once halfway through, until golden and crispy on the outside and tender inside. Serve immediately with your favorite dipping sauce.
