All the flavors of pecan pie in a warm, comforting baked oatmeal. A maple-glazed pecan topping makes this easy breakfast taste like dessert.
Preheat oven to 350°F. In an 8x8-inch or 2-quart baking dish, stir together the oats, baking powder, cinnamon, and salt.
In a separate bowl, whisk together the milk, egg, brown sugar, melted butter, and vanilla until well combined.
Pour the wet ingredients into the oat mixture and stir to combine. Spread into an even layer in the baking dish.
Make the pecan topping: In a small saucepan over medium heat, combine the pecans, maple syrup, 2 tablespoons butter, and 1 teaspoon vanilla. Stir occasionally until the butter melts and the syrup thickens slightly, 3-4 minutes.
Pour the pecan topping evenly over the oatmeal in the baking dish.
Bake for 30-35 minutes until the edges are golden brown and the oatmeal is set and puffed slightly.
Let cool for 5 minutes. Serve warm, drizzled with additional maple syrup and topped with vanilla yogurt or whipped cream if desired.
