No-bake energy bites that taste just like pecan pie, made with dates, pecans, oats, and almond butter. A wholesome grab-and-go snack that satisfies your sweet tooth.

  • 10 Medjool dates, pitted
  • 1 1/2 cups raw pecans
  • 1/2 cup old-fashioned rolled oats
  • 1/4 cup flaxseed meal
  • 1/4 cup almond butter
  • 2 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

    Add the pitted dates, pecans, oats, flaxseed meal, almond butter, maple syrup, vanilla extract, and sea salt to a food processor.

    Process on high for 60 to 90 seconds, stopping to scrape down the sides as needed, until the mixture comes together into a sticky, uniform dough. It should hold its shape when pressed between your fingers.

    Using a tablespoon or small cookie scoop, portion out the mixture and roll each portion into a tight ball between the palms of your hands.

    Place the energy bites on a parchment-lined baking sheet or plate and refrigerate for at least 30 minutes to firm up.
