Melt-in-your-mouth shortbread cookies rolled in powdered sugar. Also known as Russian tea cakes or Mexican wedding cookies.

  • 1 cup butter, softened
  • 1/2 cup powdered sugar, plus more for rolling
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup finely chopped pecans

    Preheat oven to 350°F. Line baking sheets with parchment paper.

    Cream butter and powdered sugar until light. Mix in vanilla.

    Add flour and salt, mixing until just combined. Fold in chopped pecans.

    Roll dough into 1-inch balls and place on prepared baking sheets.

    Bake for 13 to 15 minutes until bottoms are lightly golden but tops are still pale.

    Let cool for 5 minutes, then roll warm cookies in powdered sugar. Roll again once completely cooled.
