Thick-cut pork chops stuffed with a savory mixture of pecans, herbs, and breadcrumbs, then pan-seared and oven-finished.

  • 4 bone-in pork chops, 1-inch thick
  • 1 cup finely chopped pecans
  • 1/2 cup fresh breadcrumbs
  • 2 tablespoons fresh sage, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons butter, divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

    Preheat oven to 375°F. Cut a deep horizontal pocket in each pork chop.

    Melt 1 tablespoon butter in a skillet. Sauté garlic for 30 seconds, then stir in pecans, breadcrumbs, sage, and thyme. Cook 2 minutes until fragrant.

    Season pork chops with salt and pepper. Stuff each pocket with the pecan mixture and secure with toothpicks.
